Great Recipe…Something New


Hey Ladies and Gents,

Yes I have been on a hiatus, lol. I decided to make a huge change in my life and guess what….I moved all the way from Atlanta Georgia, to Brooklyn NY. ( What a change) Well living in Brooklyn I quickly found that those big chain grocery stores were basically non-existent. I also found that junk food and takeout is right at one’s

So after going through every restaurant on my block and being displeased with the lack of variety, outrages pricing, and sick looking meats in the Mom & Pop grocery stores. I decided that I either was going to gain loads of weight and get diabetes eating out or make my situation work for me. So the only this I could think of was more meatless meals and ones that could also stretch. After googling meatless meals I found great recipes. Here is one I loved most of all since I am a pasta freak It was also very budget friendly. Anyway I wanted to share. I hope you guys enjoy….

Spinach and Tomato Pasta


  • 1 tablespoon
    olive oil
  • 1 cup
    grape or cherry tomatoes, cut in half
  • 1 cup
    loosely packed chopped spinach, fresh or frozen in bags
  • 1 tablespoon
    minced garlic
  • 2 cups
    cooked whole wheat pasta, in small shapes like macaroni, rotelli, or small shells
  • 1/4 cup
    shredded parmesan cheese
  • 1 tablespoon
    toasted pine nuts
    salt, to taste
    pepper, to taste


  1. Add olive oil to a medium nonstick saucepan or skillet heated over medium-high heat. After about 20 seconds when the oil is nice and hot, add the tomatoes, spinach, and garlic and continue to saute for a few minutes until spinach is soft and bright green and tomatoes are soft. Add some salt and pepper to taste if desired.
  2. Stir in the cooked pasta and continue to cook and stir the mixture for a minute or two to heat up the pasta and blend the flavors. Sprinkle Parmesan cheese over the top and turn off the heat. Let the dish sit for a couple of minutes, sprinkle pine nuts over the top, and serve!
